What to order to go, and what to save for a visit
Futomaki and uramaki travel best: thicker rolls hold their shape and temperature, and a ready-made sharing set closes dinner for two or three people without any planning.
Nigiri and sashimi travel too, but they gain the most straight off the board — eat them first. Warm dishes such as udon or teriyaki come in separate sealed containers.
Three rules that keep sushi tasting like it does in the dining room
