A date at a restaurant has two bottlenecks: the conversation and the pace. Too loud, and you have to shout. Too slow, and silence falls between the courses. Sushi deals with both: the food arrives quickly, it comes as many small pieces, and a shared plate creates a reason to talk all by itself.
A few pointers on planning such an evening in Gdańsk — and what to order so you do not hit a wall.
The hour matters
The nicest time is the early evening, between 17:00 and 19:00: the room is still calm, the staff have time, and the light changes over the course of dinner. After 20:00 it gets louder and more club-like — a good second half of the evening, but a weaker opening if you are meeting for the first time.
What to order for two
A proven arrangement: one starter to share, two or three different rolls and something sweet at the end.
Start with edamame or tempura — eating with your hands loosens things up more than you would expect. Then uramaki plus one bolder item: tuna tartare or a few pieces of nigiri. Finish with mochi or matcha cheesecake — one dessert, two spoons.
What to avoid on a first date: very spicy rolls and anything that takes three bites to eat. Conversation flows more easily over small pieces.
To drink
If you want to keep one style through the whole evening — white wine with the fish or a glass of sake, which is a conversation topic in itself. If the evening should pick up pace — cocktails with Japanese accents: yuzu, matcha, shiso. And if one of you does not drink, the lemonades here are a separate, carefully built list rather than an afterthought.
Where to sit
A table by the wall gives more intimacy than the middle of the room; seats at the bar are good when you want to watch the drinks being made, but they work less well for a long conversation. When you book online you can leave a note — we will try to seat you where you ask.

to.gather is at Stępkarska 7 in the Old Town, a few steps from the Motława — there is somewhere to walk before or after. We open at 16:00, and at 15:00 on Friday and Saturday; in the evenings there is live music and DJ sets. Booking online takes a minute — at the weekend it is worth reserving ahead.
