Which sake should I choose with sushi?
Chilled junmai ginjo works best with nigiri and sashimi — delicate and fruity, it never covers the fish. For richer rolls and tempura go for the classic, dry Gekkeikan.
Is sake served warm or cold?
Premium styles (ginjo, daiginjo) we serve chilled — that is where the aromas show best. Warm serving suits simpler dry styles; ask the bartender, we are happy to advise.
What is Choya Silver?
It is Japanese plum wine (umeshu) — sweeter and lighter than sake, great as an aperitif or with desserts. Poured as a 100 ml glass, with a bottle option too.
