Wine in Gdańsk — the wine list for sushi at to.gather
from 18 zł
For guests over 18 only
Wine and sushi are a pairing we take seriously. The whites are chosen for raw fish: a citrusy Tracer riesling, a peppery grüner veltliner and the rounder Ionis Agave chardonnay. The reds — soft primitivo, merlot and an aged Rioja crianza — wait for tataki, tartares and the grill. Add the Terras de Felgueiras rosé and two Montelvini proseccos, classic and rosé brut, for dinners that start with a toast.
Most of the list is poured as a 125 ml glass, so the pairing can change with every course — from nigiri to dessert. The Japanese accent comes last: Choya Silver plum wine by the glass. Adults only; book a table at Stępkarska 7 in Gdańsk online.

Questions & answers
Which wine goes with sushi?
Wines with lively acidity work best with nigiri and sashimi — riesling or grüner veltliner. Rosé suits salmon rolls and tartares, while beef tataki and grilled dishes like a lighter red such as primitivo.
Are wines available by the glass?
Yes — most of the list is poured as a 125 ml glass, so each course can get its own wine. Favourites also come as 0.75 l bottles.
What should open the dinner if not wine?
Prosecco for a toast, or sake — we keep a separate Japanese list with 40 ml pours. There is also Choya Silver plum wine and the bar's signature cocktails.
